The origin of the name "Palmento" is uncertain; for the majority of linguaists the name derives from the Latin pavementum (floor, paved) on which the millstone goes, and even when by Palmento is the tub for the pressing and fermentation of grapes, the reference to the floor of the bathtub, hard, of stone returns. For others, however, it could derive from paving (beat), so the act of beating, pressing or still from palms, a branch of the vine. In the palms the grapes were pressed and the fermentation of the must was carried out. Still today, some families, very few to say the truth, use the marbles to make wine, taking care of protecting the structure and tubs carved into the rock, keeping history, culture and the memory of the peasant civilization alive.
